My New Favorite Recipe

I love food. Surprised?


I often get asked what I eat. I follow a whole-food, plant-based diet. This means I eat almost exclusively plants (fruits, veggies, legumes and grains).


The second most-popular question I get asked is, "How can you live without butter (or bacon or cheese or whatever someone's favorite food is)?


It's actually easy to live without when you focus on what's in.


Because I love food and don't like to be bored, I constantly search for recipes online. There are literally thousands of options for anything and everything. I've been known to look in my fridge, see what's there, enter the ingredients into Google and see what pops up.


One of my favorite websites for recipes is ForksOverKnives.com.


My current favorite recipe is called No-Tuna Salad. And when I say it's my favorite, I mean I'm eating this at least twice a week at lunch, or for a snack, or for dinner. My husband even takes it for lunch.


I have a couple of time-saving, money-saving tweaks that I've learned with this particular recipe that make it my own.
